WHO’S YOUR SIDE GUY?

Hi! It is I, your friendly neighborhood fly guy, a.k.a. THE ONE TRUE IRON CHEF, KOOL KIM!

And today, I want to gift you with the story of how I became your Friendly Neighborhood Side Guy!

Now, as you may know from 2026’s Beats & Bars BBQ, my side dish game is IMPECCABLE.

Not only did y’all tear through my side dishes, but I’m pretty sure I caught somebody around the side of the house licking the pan.

(We won’t say any names, CARMEN!)

And I can’t fault you. Because unlike ya’ Momma, Auntie, and Granny, I don’t put my foot in my food.

I put something else in there that’s WAY better.

FLAVOR.

Let me spell that out for you.

F.L.A.V.O.R.

I infuse my food with the right blends of herbs and spices. Seasonings that enhance, complement, and give character to the food.

And since some of y’all have been asking, allow me to take you behind the scenes of one of my most celebrated creations.

My Macaroni and Cheese.

FIRST THINGS FIRST: RESPECT THE PASTA

First off, I boil my pasta in SEASONED WATER.

A lil’ salt. A lil’ pepper. Something to avoid boiling up a pot of bland pasta.

I undercook it by just a hair because I don’t want my pasta gummy. I want you to enjoy the texture of the macaroni, not feel like you’re eating a bowl of grits because somebody boiled the life out of it.

These are the subtle things we do that make me THE ONE TRUE IRON CHEF!

Once the pasta is boiled, I let it rest in a deep bowl while I work on Part Deux.

(That’s Part Two for you uncultured types.)

PART DEUX: THE SECRET ISN’T THE CHEESE

Now it’s time for what makes the cheese taste AMAZING.

And here’s where some of y’all are going to get upset.

I don’t add an abundance of cheese to my Mac.

THAT’S FOR SAVAGES!

Instead, I begin with a wide array of cheeses selected to bring out different flavor notes.

I’m looking for character. Depth. Personality.

I avoid cheeses that create a stringy, clumpy mess, and what I call NULL CHEESES. You know, cheeses that don’t contribute much to the flavor or texture I’m trying to create.

They bring nothing to the table.

And that’s just not what I do.

But here’s the real secret.

I DON’T START WITH CHEESE AT ALL.

I start with HEAVY CREAM!

Yeah, baby. Heavy cream is the KEY.

Depending on how much pasta I’ve cooked, I pour somewhere between half a quart and a whole quart of heavy cream into my pot.

A can of Cavender’s All Purpose Greek Seasoning, 8 oz.

Then comes the seasoning.

Sea salt. Parsley salt. Garlic powder. Cavender’s All Purpose Greek Seasoning. Pepper. Onion powder. And of course, a lil’ bit of Lawry’s never hurt nothing.

HEY! I’M GOING FOR FLAVOR, Y’ALL. DON’T BE MAD!

Now here’s the next important bit.

TASTE TEST!!!

I don’t know what it is with some of you folks, but you rely FAR too much on recipes and not enough on actually tasting your food.

Dip a wooden spoon in there and take a taste.

What you’re looking for is a rich, concentrated mixture of cream and seasoning. At this point, you should have a strong sense of what your Mac and Cheese is going to taste like.

Because once that seasoned cream spreads throughout the pasta, the flavor goes EVERYWHERE.

And that’s what separates a bowl of macaroni from a culinary EXPERIENCE.

THE MACARONI NEEDS A BATH

Now we mix our seasoned heavy cream into the pasta, put it back in the pot, and allow it to lightly simmer.

We’re not trying to boil it down.

We’re trying to get that seasoned goodness to PERMEATE the pasta.

I want the cream to make it INSIDE the macaroni noodles.

Each noodle packed with creamy mystery.

Once we’ve let that simmer a bit, THEN — and ONLY THEN — do we add our cheese.

And I’m looking for the STANKEST, MUSKIEST, SHARPEST, most flavorful cheeses I can find.

Here’s something I want y’all to understand.

People add TOOOOOO much cheese to their food because they’re trying to manifest a flavor that isn’t going to appear simply by dumping more cheese into the pot.

Even the most flavorful cheeses can become surprisingly subtle when incorporated into a dish.

It’s the SEASONINGS that really allow the cheese to shine!

And another thing: folks keep adding more cheese trying to accomplish what the heavy cream is supposed to do.

The cream carries that flavor throughout the macaroni.

The cheese brings richness, depth, and character.

They have DIFFERENT JOBS!

And when they work together?

MAGIC.

WELCOME TO THE CHEESE JACUZZI

Macaroni noodles in sunglasses, a bikini and a bucket hat lounge with drinks in a hot tub of cheese sauce inside a foil pan. A boombox and a chalkboard reading “Mac so good it hits different” sit behind them.

Now, what you may or may not know — and having tasted some of y’all’s Mac and Cheese, I’m guessing you may NOT know — is that simply applying heat isn’t enough to create a beautiful cheese sauce.

You need liquid.

And that’s another reason I use heavy cream.

It helps turn that cheese into a smooth, creamy sauce that coats the noodles instead of leaving you with a clumpy, stringy situation.

We’re giving our macaroni a warm CHEESE JACUZZI!

I add the cheese gradually, keeping the heat low and stirring until everything becomes one beautiful, creamy mixture.

Thick.

Not gummy.

Not watery.

Just THICK.

And at this point, if this is your average everyday Mac and Cheese?

CONGRATULATIONS!

You’re ready to eat.

But if this is a special occasion, like Beats & Bars BBQ, or you’re thinking somewhere in that brain of yours that you’d like to put your culinary skills to the test and challenge ME, THE ONE TRUE IRON CHEF, then we’re not done yet.

THE GRAND FINALE: THE IRON CHEF FINISH

Pour your Mac and Cheese mixture into a 9-by-13-inch aluminum pan.

(I personally recommend the Beats & Bars BBQ / Iron Chef of Hip Hop Edition pans. Because why wouldn’t I?)

Now add a few scoops of Greek yogurt and mix it right into that creamy macaroni and cheese.

THAT’S what’s going to give your dish that little TWANG-A-LANG it’s been missing!

Then top everything with shredded cheese.

And here’s another VERY IMPORTANT side note.

I SHRED MY CHEESE MYSELF!!

I don’t use store-bought shredded cheese because many brands add something called CELLULOSE.

WHAT IS CELLULOSE?

Now some of y’all have probably heard people online claiming there’s WOOD CHIPS in your cheese.

BE EASY, FAM!

Cellulose is a naturally occurring fiber found in plant cell walls. The food-grade powdered cellulose used in some shredded cheeses is a purified plant-derived ingredient, sometimes sourced from wood pulp.

That does NOT mean somebody is dumping sawdust or wood chips into your macaroni!

Manufacturers use it as an anti-caking agent to keep the shredded cheese from clumping together in the bag.

It’s considered safe to eat. But here’s where THE ONE TRUE IRON CHEF takes things to another level.

Those anti-caking coatings can affect how smoothly your cheese melts.

And ME?

I don’t need anything standing between my cheese and its perfection!

So I buy my cheese in blocks and shred it MYSELF.

Is it extra work? YES! But I do work!

Is it necessary for everybody? NO!

But EVERYBODY isn’t the One True Iron Chef of HipHop.

Get your mind right!

Now you’ve been educated.

Anyway!

Spread that freshly grated cheese across the top, then place your pan into an oven at about 315°F for approximately 20 minutes, or until the cheese has melted and you’ve achieved your desired firmness.

Remember, we’ve already cooked our Mac and Cheese.

The baking is just a formality. We’re putting the finishing touches on our masterpiece.

And BABY, when you pull that pan out of the oven...

THE SMELL.

THE FLAVOR.

THE MAGIC.

You’ve got yourself some WORLD-CLASS MACARONI AND CHEESE!

SO... WHO’S YOUR SIDE GUY?

And there you have it.

Just a scintilla of what it means to be your Friendly Neighborhood Side Guy.

A mere hint of what it means to be ME...

THE ONE TRUE IRON CHEF OF HIP HOP!

But here’s the thing.

You don’t have to take my word for it.

Come taste for yourself.

Or better yet, if you think YOU have what it takes to stand across the grill from the One True Iron Chef, bring your skills to Beats & Bars Barbecue, April 23–25, 2027, and let’s see what you’ve got!

Because at Beats & Bars, the competition might be fierce...

But the CULTURE is always served with FLAVOR.

Culture over Commercialism. Flavor over EVERYTHING.
